Kumari Gold black tea, also known as golden tips, is made with a unique process that includes several modifications to the traditional black tea method. Like other specialty teas, it is made with only one or two leaves and a terminal bud, carefully plucked during the second flush (summer season). The freshly picked leaves are withered for several hours to remove moisture and protect them during rolling. The rolling is done in stages with varying levels of pressure, to release essential oils and other aromatic components without breaking the leaves. After about 20-25 minutes of rolling, the leaves are allowed to oxidize (react with oxygen so as to not undergo bacterial fermentation) for 8-10 hours depending on the type of leaves and the season. The leaves are turned and rearranged frequently during oxidation to bring out desired flavors and enhance the golden color of the buds. When the peak aroma is reached, the leaves are dried to preserve the flavors and aromas that are later prominent in the brewed tea.
